Food Friday: Recipe for Amish Sugar Cookies

These are seriously addicting cookies.  (From “Taste of Home Christmas Cookies and Candy” 2008) They’re better than the ordinary sugar cookie–lighter.  Not so dry, but maybe it’s that cup of butter!  Anyway, if you’re going to make a dessert, as my friend, Lynn, always says, “Make it good!” (and it’s no time to worry about it being healthy!)  You will love these cookies.  (Note: We used canola oil.)
Amish Sugar Cookies
Yield:  approx. 5 dozen cookies
1 cup butter, softened
1 cup vegetable oil
1 cup granulated sugar
1 cup confectioners’ sugar
2 eggs
1 tsp vanilla
4-1/2 cups all-purpose flour
1 tsp baking soda
1 tsp cream of tartar
In large bowl, beat the butter, oil and sugars.  Beat in eggs until well blended.  Beat in vanilla.
  In separate bowl, combine flour, baking soda and cream of tartar; add to creamed mixture, mixing well.
  Drop by small teaspoonfuls on ungreased baking sheet.  Bake at 375 degrees for 8-10 minutes.
