We have never grown spinach in our garden before. This year my gardeners (my husband and my daughter) planted some! What a treat to eat the first fresh spinach from our very own garden last week. It was absolutely delicious! So, because it’s finally summer and in honor of the first beautiful warm day we’ve had in a long time, here is a wonderful salad recipe that uses fresh spinach.
Recipe for Spinach-Citrus Salad
1 bunch romaine lettuce in bite-sized pieces
1/2 lb fresh spinach in bite-sized pieces
3 oranges, peeled and sectioned
1 grapefruit, peeled and sectioned
1/2 cup sour cream
1/2 cup mayonnaise
1-1/2 Tbsp lemon juice
1/4 cup honey
1/2 tsp dry mustard
celery salt to taste
salted nuts, chopped (optional)
Combine lettuce, spinach and fruits in large salad bowl and toss gently. Mix remaining ingredients for dressing and toss with salad. Sprinkle with chopped salted nuts, if desired.
Some people like to add red onion and even mushrooms to their Spinach Salads, so experiment and let me know what you come up with!
